Chilled Roasted Red Pepper, White Bean Basil Soup topped with Arugula.
Basically roast the red peppers, saute some onion, then add the roasted red peppers, white beans, and vegetable broth. Bring to a boil, then simmer for about 15 mins. I added lots of fresh basil, some crushed red pepper flakes, and salt and pepper to taste. Then puree everything in a blender and voila! Put in the fridge for a cool, hearty summer soup!
